„Gluten harms everyone; a gluten-free diet is healthier.”
In coeliac disease (~1% of people) gluten genuinely harms, and wheat allergy exists. “Non-coeliac gluten sensitivity” in blinded trials (Biesiekierski 2013) mostly traces to FODMAP carbohydrates, not gluten. In healthy people a gluten-free diet in Harvard cohorts (n=110,017) did NOT reduce heart disease, but did mean less whole grain and fibre. Gluten-free products often carry more sugar and fat. With symptoms: coeliac screening (tTG-IgA) BEFORE removing gluten.
